Here is a useful way to serve leftover ham that your family will enjoy. This casserole dish is similar to scalloped potatoes with cheese, but with some diced ham added.
Ingredients:
6 cups of of russet potato slices
3 tbsp. of butter, divided
3 cups of diced ham (1/4" cubes)
1 1/2 cups of milk
1 1/2 cups of heavy cream
1/4 cup of flour
1 1/4 cups of grated white sharp cheddar cheese
1 cup of grated hard provalone or pecorino romano cheese
Black pepper to taste
Directions:
Preheat the oven to 350°F.
Lightly butter a 9" x 13" glass casserole with one tablespoon of butter.
Heat two tablespoons of butter in a large skillet on medium heat.
Add the diced ham to the skillet and cook with stirring until it is thoroughly heated, about 3 to 4 minutes.
Remove the skillet from the heat and set it aside.
Combine the milk and cream in a microwave safe container, and microwave it for a minute or two, until the mixture is no longer cold.
Whisk in the flour and pepper until the ingredients are totally combined, then set the mixture aside. (You may add salt, but the cheese and ham are salty, so add salt sparingly.)
Combine/mix the 2 grated cheeses in a bowl. Set the bowl aside.
Wash and peel the potatoes.
Use a mandolin or other type of slicer to cut the potatoes into 1/16" to 1/8" thick slices (thinner is better).
Rinse the potato slices to remove excess starch and let them drain in a colander for five minutes.
Layer one-third of the potato slices in the prepared casserole dish.
Spread one-third of the ham on top, then sprinkle one-third of the grated cheeses, then pour on one-third of the cream mixture evenly.
Do the layering steps two more times, ending with a sprinkling of cheese and the rest of the cream mixture.
Cover the casserole with aluminum foil and bake the contents for 40 minutes.
Remove the aluminum foil and continue baking until the casserole contents are bubbly and hot, with the top turning gold in color, about 20 minutes more, or a bit longer if necessary.
Remove the casserole from the oven and put it on a wood cutting board.
Use a spatula to cut the scalloped potatoes with ham into serving size squares.
Serve the scalloped potatoes with ham while hot, along with any other side dishes you made for the meal.
